Dabei zeigte sich die gro\u00dfe Abh\u00e4ngigkeit der Schaumstabilit\u00e4t von Polysacchariden wie Xanthan und Guarkernmehl. Der Einsatz von Triethylcitrat erwies sich als sehr positiv im Hinblick auf das Schaumvolumen und der Aufschlagzeit. Durch die Verwendung von Aluminiumkaliumsulfat konnte das Eiprodukt h\u00f6her pasteurisiert werden ohne funktionelle Einbu\u00dfen zu erleiden. Zus\u00e4tzlich wurden im Zuge dieser Arbeit ein Konzept und Versuche zur Entwicklung eines Convenience-Fl\u00fcssigkaiserschmarrns, der ohne Hilfsmittel wie Mixer oder R\u00fchrstab in der Pfanne ein luftiges und flaumiges Endprodukt erzeugen sollte, gemacht.
